About the location:

A rare gem on Florida’s Gulf Coast of Southwest Florida, Naples Beach Club, a Four Seasons Resort, is an exclusive collection of 156 luxurious beachfront private residences and a 222-room hotel all within a 125-acre walkable coastal village in the heart of Old Naples. Honoring local heritage and artfully reimagined for modern-day elegance, the resort includes residents-only facilities and amenities, a luxury spa and state-of-the-art well-being/fitness center, exquisite and diverse fine dining outlets, outdoor pursuits to include a tennis center, and an 18-hole golf course, bowling and movie theater experiences, and an exclusive private club. The first of its kind, the Naples Beach Club, a Four Seasons Resort, is paradise found.

About the role:

This position is responsible for overseeing the hotel's wine program. The position will plan, organize, and control all aspects pertaining to wine purchases, sales, menus, education, inventory and consumption at the hotel. The position will be required to be in service for server shifts in Merchant Room and will also work alongside the Hotel’s other outlets to drive wine sales and customer satisfaction.  

What you will do:

ESSENTIAL FUNCTIONS:

  • Describe the selection of food & beverage menu items to guests by offering interesting, and vivid descriptions of the each item’s, origin, taste, and preparation methods; communicate guest orders including any special needs or requests to the kitchen using the hotel’s point-of-sales system; coordinate food timings; check completed kitchen orders with the guest’s original order; transport items to the guest table in a timely manner to ensure proper food quality. 
  • Develop and continuously update a wine list which reflects the style, philosophy, pricing goals, budgetary restrictions (or lack thereof), customer base & food styles of the establishment. 
  • Ensure correct glassware for wines, beers and spirits. Provide impeccable, professional service for sparkling, still, rose, red, dessert wines and spirits, including decantation of wines for aeration and to separate clear wine from sediment.
  • Ensure that the service standards for mise en place, server appearance, station orderliness & cleanliness are maintained. Manage wine cellar, including proper receipt, storage, inventory and ordering of beverage products.
  • Assist in a continuous wine training program and conduct training sessions with service staff & Catering/Conference Services department. 
  • Utilize all computer systems relevant to the Restaurant, Bar & Room Service. 
  • Perform other tasks or projects as assigned by hotel management and staff. 
  • Communicate effectively with F&B employees and managers on a daily basis.
  • Anticipate guest needs, ascertain satisfaction, and offer suggestions, and respond urgently and appropriately to guest concerns and requests.
  • Properly and accurately close guest checks; process cash and credit card payments; properly settle voided checks or complimentary meals.  
  • Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in Impact.   

NON-ESSENTIAL FUNCTIONS:

  • The ability to execute functions or special receptions in rooms, suites and boardrooms. 

What you bring:

  • Ability to read, write and speak English
  • College degree in Hotel and Restaurant Management or equivalent experience preferred
  • Sommelier Certification required
  • Minimum two years in the same or similar position
  • Computer proficiency especially in Microsoft Word and Excel
  • Comprehensive knowledge of the following as they relate to wine, spirits, beer & related products: the history, science, technology, sensory analysis, management, service & local laws.
